Chicken and Rice
Serves 4

INGREDIENTS:
2 Tablespoons olive oil 
1 ¼ pounds ground chicken 
3 cloves garlic, minced 
1 ½ Tablespoons minced ginger 
2 cups rice 
1 Tablespoons soy sauce  
1/2 lime, juiced  
1 bunch scallions, thinly sliced  
Salt and pepper 
METHOD:
Heat oil in a skillet. Add chicken and season with salt and pepper. When cooked through, add the garlic, ginger, rice, and 4 cups water. Cover and cook over low heat for 20 minutes. Add soy sauce and lime juice. Sprinkle with scallions.

 Cook time: 25 minutes
  Round Out the Meal: 
 With steamed green beans.

 Go easy on the soy sauce.
